By Popular Demand we are HAPPY to ANNOUNCE our 'Master of BBQ' Class Series!  Due to intense interest in having classes for individuals or groups of BBQ enthusiasts, we have put together a FOUR Class Series to teach ALL aspects of BBQ and have FUN doing it!
You can choose to take ANY of the classes individually or ALL four for a DISCOUNTED Price!

These are the PERFECT Classes for folks who want to learn how to cook 'Real Deal' BBQ (Wood or Charcoal Smoked) or for existing BBQ Afficinados who want to hone their techniques.  We will cover everything from:
 

  • Basic Kitchen Techniques
  • Food Safety
  • Butchering and Knife Skills
  • Rubs and Sauces
  • BBQ Side Dishes
  • Cooking Methods & Techniques

AND  we'll all get to EAT the RESULTS!! 
We'll even be offering a class on How To Start Your OWN BBQ Business!  From things you need to do to create and build your business to sourcing, pricing, marketing, Social Media and SEO...we can help you get the skills you need to make some extra cash or a living by 'Doing Que'!

As a leading 'Off Premise' Caterer, we have prepared TENS of THOUSANDS of POUNDS of protiens over the years and have put smiles on countless faces.  Pitmaster Jim is not only the Executive Chef here, he is our Competition Team Leader, a Founding Member of Operation BBQ Relief and a KCBS Certified BBQ Judge.  We are ready to put his experience and knowledge to work for YOU and your fellow BBQ Lovers!



This FOUR PART Series
will include:


BBQ 101: We have re-structured our 'Basic' and 'Advanced' BBQ Classes to offer a more well rounded individual or weekend experience for our participants! This class (BBQ 101) will focus on equipment selection, basic operation of equipment, necessary supplies to cook over wood smoke in a 'Low and Slow' way and then we make Rub and Sauce from scratch and use it to cook Pork Shoulder and Chicken Thighs as an introduction to cooking AWESOME BBQ at home!  We NEED at least 6 folks to hold the class.

BBQ 201: Building on the information provided in our 'BBQ 101' class, we will focus more on meat sourcing, preparation and seasoning techniques including injections as well as different types of Rubs and Sauces.  We will then prepare and cook Brisket and Pork Spare Ribs using techniques that can be easily applied by the home cook.  We will discuss advanced smoking techniques, including cold smoking and brines as well. We NEED at least 6 folks to hold the class.

Going Whole Hog:  Pretty self-explanatory but this class will focus on more than just preparing and cooking a 'Whole Hog' the way we do it best...Carolina 'Pig Pickin' Style over Wood-Smoke for a LONG time.  We'll also take a close look at additional preparation and cooking techniques including the 'Top Down' heating method with Charcoal using La Caja China!  We NEED at least 6 folks to hold the class.

BBQ Business:  In this class we will cover all of the Basics you need to know about how to start, operate and be successful in the BBQ Business.  We'll focus on building your business LEGALLY and all of the Regulations at various levels of Government.  Food Safety certification and requirements.  How to make the best 'Margins' so that your able to continue on in the BBQ Business.  Competition and how it can help (and Hurt) your operation.  And we'll discuss the use of Social Media and how to make sure that you are visible to your potential customers in traditional media and online.

CLASSES WILL BE 6-8 HOURS AND OFFER PLENTY OF 'HANDS ON' TIME AND LOTS OF INTERACTION!  ALL CLASSES WILL BE CONDUCTED WEATHER PERMITTING.

Wet Your Appetizers AND Your Feet!
Here's your chance to make a FULL Day out of BBQ and Boats!  Taught at our outdoor venue along the Scenic Susquehanna River in cooperation with our good friends at Blue Mountain Outfitters, this course offers the best of BOTH worlds!

Spend your morning learning how to cook a Variety of BBQ Appetizers including:
  • Bacon Wrapped Stuffed Jalapenos
  • Shrimp and Scallop Kabobs
  • Smoked and Stuffed Mushrooms
  • Smoked Lamb Chop Lollipops
  • ...and MORE!

THEN, spend your afternoon taking in the scenic location and testing out a variety of Canoes and Kayaks that are available for Rent or Purchase from Blue Mountain Outfitters!  It's a GREAT way to spend a Day and you'll have all the help you need to dial in your BBQ and your paddling techniques!

The "Full Deal" BBQ Class At YOUR Location

Designed for that Serious BBQ Enthusiast, this course is taught at your location and includes EVERYTHING needed to learn to make GreatQ!

Our Pit Master will arrive with 2 Pits and at least 2 of each of the four Kansas City BBQ Category Meats: Pork Butt, St. Louis Style Spare Ribs, Brisket and Chicken.  Plan on about 6-8 hours together for up to 6 people...there'll be enough food to feed about 30-40 Friends and Neighbors...we'll bring a few rolls and sides along to keep 'em happy!
