These are the PERFECT Classes for folks who want to learn how to cook 'Real Deal' BBQ (Wood or Charcoal Smoked) or for existing BBQ Afficinados who want to hone their techniques. We will cover everything from:

This FOUR PART Series
BBQ Basics: Starting with Pork and Chicken, we will cover the Art of Smoking Meats and Basic BBQ Skills, including Food Safety, BBQ Sauces and Rubs, Smoking Techniques, Preparation and Cooking the BEST BBQ!
Advanced BBQ: Using Pork, Beef and some other 'Specialties', we'll discuss various cuts of meat, how to prepare them for 'the smoke', recipe development and Advanced Temperature Control in addition to preparing some TASTY treats for all to enjoy and take home!
Going Whole Hog: Pretty self-explanatory but this class will focus on more than just preparing and cooking a 'Whole Hog' the way we do it best...Carolina 'Pig Pickin' Style over Wood-Smoke for a LONG time. We'll also take a close look at additional preparation and cooking techniques including the 'Top Down' heating method with Charcoal using La Caja China!
BBQ Business: In this class we will cover all of the Basics you need to know about how to start, operate and be successful in the BBQ Business. We'll focus on building your business LEGALLY and all of the Regulations at various levels of Government. Food Safety certification and requirements. How to make the best 'Margins' so that your able to continue on in the BBQ Business. Competition and how it can help (and Hurt) your operation. And we'll discuss the use of Social Media and how to make sure that you are visible to your potential customers in traditional media and online.
CLASSES WILL BE 6-8 HOURS AND OFFER PLENTY OF 'HANDS ON' TIME AND LOTS OF INTERACTION! ALL CLASSES WILL BE CONDUCTED WEATHER PERMITTING.
THEN, spend your afternoon taking in the scenic location and testing out a variety of Canoes and Kayaks that are available for Rent or Purchase from Blue Mountain Outfitters! It's a GREAT way to spend a Day and you'll have all the help you need to dial in your BBQ and your paddling techniques!

Designed for that Serious BBQ Enthusiast, this course is taught at your location and includes EVERYTHING needed to learn to make GreatQ!
Our Pit Master will arrive with 2 Pits and at least 2 of each of the four Kansas City BBQ Category Meats: Pork Butt, St. Louis Style Spare Ribs, Brisket and Chicken. Plan on about 6-8 hours together for up to 6 people...there'll be enough food to feed about 30-40 Friends and Neighbors...we'll bring a few rolls and sides along to keep 'em happy!
